Chili Maple Oatmeal

Ingredients

  • 1 ¼ cups vegetable broth (or water)

  • ⅓  cup whole grain steel-cut oats 

  • pinch of Salt

  • ⅓ cup Carrot, diced

  • 1 cup kale, chopped

  • 3 t chili maple sauce

  • ½ tsp spring rosemary (minced, ¼ tsp dried)

  • ½ t avocado oil

  • 1 Egg

  • ½  tsp toasted sesame oil

  • ½  tsp sesame seeds

  • Scallion

  • Red pepper flakes or chili oil  (optional, to taste)

instructions

  1. In a medium saucepan with lid, bring broth to a boil.

  2. Pour in oats + salt. Reduce heat to low and simmer (uncovered) for 10 minutes. Stir occasionally.

  3. Add carrots, kale and Chili Maple sauce.  Continue to simmer until most of the liquid has evaporated (~10 minutes). Stir frequently.

  4. add rosemary, Cover and rest off heat. Stir occasionally. 

  5. In a small skillet, heat 1 tablespoon of oil over medium heat. cook egg to your liking.

  6. Taste oats and add more salt or sauce if desired. transfer oats and egg to a bowl.

  7. Finish with toasted sesame oil, sesame seeds, scallion and red pepper flakes.

  8. Serve immediately and enjoy!
