Chili Maple Oatmeal

Ingredients
1 ¼ cups vegetable broth (or water)
⅓ cup whole grain steel-cut oats
pinch of Salt
⅓ cup Carrot, diced
1 cup kale, chopped
½ tsp spring rosemary (minced, ¼ tsp dried)
½ t avocado oil
1 Egg
½ tsp toasted sesame oil
½ tsp sesame seeds
Scallion
Red pepper flakes or chili oil (optional, to taste)
instructions
In a medium saucepan with lid, bring broth to a boil.
Pour in oats + salt. Reduce heat to low and simmer (uncovered) for 10 minutes. Stir occasionally.
Add carrots, kale and Chili Maple sauce. Continue to simmer until most of the liquid has evaporated (~10 minutes). Stir frequently.
add rosemary, Cover and rest off heat. Stir occasionally.
In a small skillet, heat 1 tablespoon of oil over medium heat. cook egg to your liking.
Taste oats and add more salt or sauce if desired. transfer oats and egg to a bowl.
Finish with toasted sesame oil, sesame seeds, scallion and red pepper flakes.
Serve immediately and enjoy!
